The “back-to-school” season is always stressful – with getting new supplies, meeting this year’s teachers, and buying the kids new clothes. But packing lunches doesn’t have to be a chore! Send your children off to school with this healthy, cheap, and easy 15-minute lunch!
Chips with Guacamole
Pack some chips and store-bought or homemade guacamole. Guacamole contains healthy fats and are full of vitamins and nutrients. Homemade guacamole often contains only a few ingredients like avocado, salt, lemon juice, cilantro, onions, and tomatoes, so it is easy to make. However, store-bought guacamole still has health benefits – and the delicious taste.
Cheese or Bean Quesadillas
Quesadillas are easy to make and surprisingly healthy. Beans and cheese both provide protein and cheese has calcium and other vitamins. Just add cheese and optional beans to a tortilla and fry it for a few minutes.
Banana Pops
OK, so chocolate isn’t exactly healthy (sadly). But these banana pops still provide some vitamins and nutrients while being a delicious and easy dessert. Cut a banana in half, and add popsicle sticks in both ends. Melt some chocolate in a bowl and dip the banana pops so that chocolate covers about half of the pop. Coat one chocolate banana in granola and coat the other in chopped pecans. When packing the lunch box, put these near an ice pack so they stay fresh.
