After-School Snacks MVPs

The school bell rings, backpacks hit the floor, and suddenly everyone is starving. It’s a repeating phenomenon that scientists should probably study. Before that post-school hunger takes over and the kitchen becomes a disaster, having a few simple snacks ready to go may just save the day. Whether your little ones are heading to a sporting practice, tackling homework or keeping occupied in other ways, a little fuel goes a long way in keeping the hangries under control. 

Energy Bites

Ingredients
  

  • 1.5 cups old-fashioned oats
  • 1 cup creamy peanut butter
  • 0.5 cup mini chocolate chips
  • 0.5 cup ground flaxseed (or substitute chia seeds)
  • 4 tbsp honey (or maple syrup or agave)
  • 1 scoop protein powder optional

Method
 

  1. Combine the oats, peanut butter, chocolate chips, flaxseed, and honey in a medium bowl. Stir until fully combined. 
  2. Transfer the mixture in the bowl to the fridge for 15 minutes to set the batter. 
  3. Roll into ~18 bite-size rolls and enjoy! Store in the fridge for up to 2 weeks. 

Ingredients
  

  • 3-4 burrito-sized tortillas
  • 1/8 oz. cream cheese softened
  • 1/2 cup sun-dried tomatoes chopped
  • 8 leaves of lettuce
  • 8 slices of deli turkey (or ham)
  • 8 slices of Swiss cheese (provolone or American) 

Method
 

  1. Mix together softened cream cheese, green onions, and sun-dried tomatoes. Place a tortilla on a cutting board and spread out a layer of the cream cheese mixture on top of the tortilla. Make sure to spread it to the edges of the tortilla. 
  2. Place lettuce down the center of the tortilla. Next, lay slices of turkey on top of the lettuce, followed by cheese slices on top of the turkey.
  3. Roll the tortilla lengthwise into a tight roll.
  4. Wrap tightly in plastic wrap and place in the fridge until ready to slice and serve. Slice off the ends then cut into equal pieces.
